This classic is a winner! Start by smoking up a bunch of chicken thigh. I used four thighs for these sliders.
Take the meat off the bone and either shred with your hands or chop with a knife.
Here is the rest of what you will need.
- 2 cups shredded smoked chicken thighs (4 large)
- 2 Tbls mayo
- 2 Tbls diced celery
- 2 Tbls diced tomato
- 2 Tbls diced parsley
- 2 tsp Dijon mustard
- 1 tsp salt
- 1 tsp pepper
Mix it all up.
Let the smoked chicken salad chill in the refrigerator for a while so the flavors will all come together. Toast yourself a slider bun or two and put everything together.
Eat more chicken!
